This French Onion Soup was my 2nd lunch yesterday. It’s from Eddie Rickenbacker’s and it was A+!! I haven’t had French Onion Soup in a long time, and this was definitely really awesome. It’s slightly different from the French Onion soup that I’m used to in that it didn’t come in the familiar brown soup crock that it usually comes in and the cheese was melted directly onto the bread, not over the bowl covering the soup… I’m not complaining though because it was really good – the broth was nice and salty and beefy and oniony and the bread was a nice sourdough which gave the melted swiss an interesting flavor. The only thing I would modify about this dish is I would want more cheese. …Definitely more cheese.
This soup is a great afternoon snack.
